These Vegetable Ice Cream Flavors Are Packed With Carrots, Spinach, And Corn

When your parents told you to eat your veggies, they probably never imagined a day when eating vegetables would consist of devouring a bowl of ice cream. Well, the Portland, Oregon-based ice cream company Salt & Straw just introduced its "Veggies You Crave" line of new flavors, and it's is brimming with carrots, spinach, corn, and more.

The veggie-inspired flavors in the new collection are:

  • Carrot Cake Batter with Pralined Hazelnuts:

  • Spinach Cake with Chocolate Tahini Fudge

  • Green Fennel & Maple

  • Charred Corn Curd, Cotija & Tajin

  • Red Chili Curry & Makrut Lime Crispy Rice

To me, the most intriguing one is the elote-inspired Charred Corn Curd, Cotija & Tajin. Fresh charred corn, a touch of lime and tajin, and crumbles of cotija cheese are blended into a house-made mayo ice cream. The ice cream makes for a surprisingly subtle base that brings just the right amount of tartness. Don't expect large kernels of corn with this flavor; instead, smaller pieces are scattered throughout. The flecks of Tajin make it pop with the flavors of chili and lime.

If you're eager for fall flavors like nutmeg, cinnamon, and molasses, try the Carrot Cake Batter flavor. Fall spices mesh with candied hazelnuts and a swirl of cheesecake frosting for a flavor that's easy to cozy up to. Spinach Cake with Chocolate Tahini Fudge is far more decadent than the "spinach" in its name might suggest. There's vanilla ice cream, fluffy cake, and house-made tahini fudge.

Red Chili Curry & Makrut Lime Crispy Rice is the collection's only vegan option. With flavors of coconut, red chilis, lemongrass, ginger, and various spices, each spoonful of Red Chili Curry summons a different experience.
