Vegan Chocolate Chip Cookie Dough Balls

We found this out when we challenged our Yahoo colleagues across the globe to share their favorite holiday recipes with us. Here is one of our favorites, a no-bake dessert recipe from Tara Keramaty, an account manager for the health and wellness team.

Vegan Chocolate Chip Cookie Dough Balls
Makes 45 balls

I’ve made these sweet dough balls dozens and dozens of times and was recently commissioned by a fellow Yahoo to prepare them for a party. This recipe is vegan, but you would never know it—some of its biggest fans are non-vegan.

1/2 cup margarine
3/4 cup light brown sugar
1/4 teaspoon salt
1 tablespoon vanilla extract
2 tablespoons water
1 1/4 cups flour
1/3 cup mini dairy-free chocolate chips (I use Enjoy Life brand)
10-12 ounces dairy-free semi-sweet chocolate chips (I use vegan chocolate chips from Whole Foods)

Line 2 baking sheets with parchment paper.

In the bowl of a standing mixer, combine margarine, brown sugar, salt, vanilla, and water. Add flour, slowly, until combined. Remove bowl from mixer. 

Fold in mini chocolate chips. Cover the bowl with plastic wrap. Chill for about an hour in the refrigerator.

Roll dough into 1-inch balls and line them up on the parchment-covered baking sheets. Cover with plastic wrap and put in freezer for 15 minutes. 

Meanwhile, melt semi-sweet chocolate chips in a small bowl in the microwave. Give it a minute to cool off without allowing it to harden. Dip each cookie dough ball into the melted chocolate using a spoon, making sure to coat evenly, then put back on the baking sheet. 

Keep refrigerated until serving and store leftovers (if there are any!) in the refrigerator.
