Universal Studios Shared Their Halloween Vegan Mac & Cheese Recipe And It Looks Incredible

A trip to your favorite theme park may be off the table for you this year, but thankfully, so many of your favorite park dishes are being shared online so you can make them for yourself at home. The newest dish to be shared with fans is the vegan "Jack'd Up Mac" from Universal Studios Orlando Resort that is only available during Halloween.

The recipe was shared with TODAY, and as far as ingredients go, all you need is olive oil, red and green bell peppers, mushrooms, kosher salt, black pepper, plant-based sausage, vegan pesto, cavatappi pasta, and vegan pizza and parmesan cheese. Universal's executive sous chef Ron Cope shared the recipe with TODAY and emphasized that even people who aren't strict vegans would enjoy the dish because of its flavor and variety of textures.

The Jack'd Up Mac is being served through November 1 at Universal's Skeleton Bar, which is a redesigned version of Cafe La Bamba that serves Halloween dishes for the current season. To make the mac & cheese from yourself you'll want to cook your pasta, then sauté the mushrooms and peppers after seasoning them with salt and pepper. Once those are softened a bit, you'll add a plant-based sausage crumble of your choice to the mixture.

After two-to-three minutes, you should reduce your heat and add your pasta and pesto with half of your vegan pizza cheese. Toss that for one minute and then add the entire mixture to an oven-safe bowl with the remaining cheese and place it in the oven on broil for 20 seconds. When it's all melted together you'll have your very own version of Universal's Jack'd Up Mac. Praise be.
