The 'Today' Show Cast Went Crazy Over Hoda Kotb’s Latest Instagram of Joel Schiffman

Hoda Kotb's fiancé, Joel Schiffman, celebrated his 62nd birthday over the weekend with blue-frosted cake, quality family time, and well wishes from some of the Today show star's fellow co-hosts.

On Instagram, Hoda shared two photos from her husband-to-be's recent birthday festivities. In one picture, Hoda, Joel, and their daughters, Haley Joy and Hope Catherine, appear to be Facetiming Hoda's mom, Sameha, at the kitchen table. The second photo is equally adorable, with Joel holding Haley Joy and Hoda leaning in to pose for the camera.

"Happy bday joel!!! We love you honey! Mom couldn’t be here so next best thing! ❤️," Hoda wrote alongside the sweet snaps.

After seeing the post, some of Hoda's NBC co-stars rushed to the comment section to wish Joel a happy birthday. "Happy bday Joel. Can’t wait until we can double date again. 💙❤️," Jenna Bush Hager wrote. Meanwhile, Al Roker commented, "Happy birthday, Big Guy." Echoing Al, Joy Bauer wrote Happy Birthday, Joel😘❤️✨."

This is the seventh birthday Joel has spent with Hoda since first meeting the morning show co-host in the summer of 2013. From there, the two went public with their relationship in 2015, moved in together in 2016, and adopted Haley Joy in early 2017. Two years later, they adopted Hope Catherine and got engaged right before last Thanksgiving.

Though the two haven't landed on an details for their wedding, but Hoda told Good Housekeeping in February that they were hoping for a fall wedding on "a beach somewhere."

"I picture just pausing for one moment and noticing that here's a guy who I didn't know six years ago, who changed the course of my life and here's two children walking [hopefully Hope will be walking by then] down the aisle."

Hoda continued: "I don't know that I picture what I'd be wearing or the flowers, I don't picture that. But I do picture him."
