TikTok-famous chef cooks traditional Bengali dishes with his mother

Cooking can be a family affair – especially for TikTok-famous chef Shihan Chowdhury (@chilipeppercooks). In this episode of ITK: Family Style, we watch as Shihan jumps into the kitchen with his mother to whip up a classic spice-filled Bengali chicken dish, fish, and a side of chitoi pitha.

Shihan shares that in Bengali culture, meals are all about family time. Rather than going out to restaurants, people tend to go to relatives’ homes, cook and eat together. He says, “The way I would describe Bengali food is that it’s a symphony of different flavors. It’s sometimes heavy; it’s sometimes light. Each dish is completely different but have a similar essence.”

Shihan’s mother explains that her cooking style came in part from her mother, in part from her mother-in-law and has her own twist to it.

The mother-son-duo then heads to the kitchen to demonstrate how they make a few traditional dishes, including murgi torkari and mregel mas bazi.

To make the curry, Shihan starts by toasting the aromatic spices: bay leaves, a cinnamon stick, green cardamom, star anise, black cloves and whole black peppercorns. They add the onions next and cook for two to three minutes before adding garam masala, turmeric, red chili, cumin, and coriander powder. Next, they prep the fish using salt, pepper and mustard oil. Shihan notes that they try not to over season the fish to maintain its natural flavor.

They serve the curry with chitoi pitha – homemade rice crackers that act as a sponge to soak up the curry for a flavorful bite.

Shihan says that growing up, he would watch his grandmother cook every day. “Watching her create, and make dishes was absolutely inspiring to me. I still haven’t had any food that’s been better than my grandmother’s.”
