Caprese Sandwich with Balsamic Tomatoes
We are all about cold sandwiches, vegetables, and a salty treat. This caprese sandwich is one of my favorites! Make a caprese sandwich with balsamic tomatoes Ingredients: 1 baguette ½ cup cherry tomatoes, halved ½ pound fresh mozzarella, sliced thin 2 or 3 fresh basil leaves, torn 2 tablespoons balsamic vinegar ¼ cup olive oil 1 pinch sea salt
Directions: 1. Place the sliced tomatoes in a bowl with the balsamic vinegar, olive oil and salt. Toss well. Let this mixture rest for at least 10 minutes. 2. Cut the baguette in half and place layer the mozzarella in one layer. Then scatter the basil leaves on top. Finally, top the basil with the balsamic tomatoes. Drizzle any of the remaining balsamic mixture over the top of the tomatoes. Close the sandwich and serve.
