These simple pizza nachos with melted vegan cheese, plant-based pepperoni and a few colorful veggies on top are a fun treat for any festive frightful October party. Ghost "boo chips" make the perfect accent. Make pizza nachos Ingredients: 2 cups Boo Potato chips (by Tony's Fine Foods - bought from Whole Foods) 1/4 cup vegan cheese (Daiya or Teese brands melt best) 3-5 vegan pepperonis (Tofurky brand used) 1/4 red bell pepper, sliced pinches of parsley or cilantro red pepper flakes (optional) Directions: Add the cheese and pepperonis to the chips and either microwave on high until the cheese melts - or place in oven on broil setting until cheese melts. The heat will also cook the pepperonis. Garnish with the fresh bell peppers, parsley and red pepper flakes. Serve warm!
