Sub shop, bakery stand and wine counter open on Fort Collins restaurant scene in August

A new sub shop, bakery stand and wine counter squeaked into the Fort Collins dining scene just before the end of summer.

The three new spots were the only new additions to Fort Collins in August, though two other restaurants and one coffee shop are hot on their heels, eyeing September openings.

Here's everything that opened, was on its way or announced a closure in Fort Collins in August.

What opened

Vinny's Sub-Hub Sandwiches, 1501 W. Elizabeth St., opened in Campus West's Munchies Super Market, taking over a space formerly occupied by JoJo's Colorado BBQ. Vinny's serves New York and Italian-style hot and cold sandwiches. It has plans for late-night food delivery, which will be operated in-house and also available on major third-party food delivery service sites, according to the shop's co-owner, VJ Kapoor.

Mystic Moon Bakery and Blendings at The Hillside Vineyard have put down roots in an Old Town Fort Collins flower shop. The bakery — formerly Loveland's Cupcake Gypsies — opened a bakery stand and the Laporte winery opened a wine counter at Bloom Floral Boutique, 153 N. College Ave., on Aug. 4. Mystic Moon Bakery serves up a weekly menu of rotating cupcake flavors, as well as coffee, tea, soda, cinnamon rolls and cake pops. Blendings at the Hillside Vineyard conducts wine tastings and sells its wines by the glass or bottle, with a rotating array of roughly 20 wines at Bloom at a given time. It will offer two of its frozen wines, which are also available at its satellite frozen wine tasting room in The Exchange.

What announced plans to close

Everyday Joe's, 144 S. Mason St., is closing its doors after 20 years in Fort Collins. The Old Town coffee shop, which started as a neighborhood outreach initiative by Timberline Church in 2003, is shuttering "after a season of prayerful consideration and a deep calling to further other missional passions," Timberline Church said in a statement to the Coloradoan. "Due to rising costs, economically it is no longer viable to continue," the statement continued. The coffee house said its last day of business would be Friday, Sept. 1.

What's on the way

Happy Trails Coffee Co., 120 W. Stuart St., is slated to open next door to Snack Attack Specialty Sandwiches & Brews in early September, according to the Midtown sandwich shop's co-owner Lauren Storeby. The coffee shop will operate out of the front space of its Stuart Street unit, while sharing its soon-to-be expanded kitchen with Snack Attack. It will serve coffee made from locally roasted Wander Coffee beans and grab-and-go food, said Storeby. Happy Trails Coffee Co. is set for a soft opening in early September, with a grand opening scheduled for Sept. 8.

Agave Underground, 321 E. Foothills Pkwy., will soon be the new kid on the block at Foothills mall. The eatery has taken over the mall's former Bar Louie space, transforming it into a colorful home for the forthcoming Mexican tapas and tequila bar concept. Agave Underground will focus on small plates, traditional Mexican entrees and — if all goes as planned for owners Fausto Felix and Perla Ruiz — will feature the largest inventory of tequilas and mezcals in Fort Collins. The restaurant is set to open by mid-September.

Yellow Crunch is headed to The Exchange, 200 N. College Ave. The Colombian eatery — named for the crunchy, yellow cornmeal empanadas on its menu — hopes to open in September. It takes over the space formerly occupied by Chick'nCone, which closed in December after four years at the open-air plaza.

Catching Up

Blackjack Pizza, 4206 S. College Ave., opened last month. The new Midtown eatery is the second Blackjack Pizza in Fort Collins, joining the pizza shop's existing West Elizabeth Street location.

Locust Cider has gone gluten free. The Old Town restaurant and cider taproom made the switch July 8 after noticing how its gluten-free ciders drew in a customers with celiac disease. Its menu and kitchen practices were soon overhauled to make the establishment fully celiac-safe.
