Step Aside, Cottage Cheese—Sour Cream Ice Cream Might Be the Next Big Thing

Here’s how to make this trendy, ultra-easy dessert—and we've got the recipe for ricotta ice cream, too.

First came feta, which brought with it an outrageous amount of baked feta pasta and whipped feta dip recipes. Then came cottage cheese, and that dairy-based food trend du jour added a flurry of savory recipes, such as pizza toasts and pasta sauces. Then things snowballed into a storm of sweet recipes ranging from edible cookie dough and “ice cream”—all made with cottage cheese.

What’s next? Believe it or not, it's a neck-and-neck race between sour cream and ricotta cheese. No matter which comes out on top, these two unlikely ice cream ingredients are sure to please.

How to Make Ricotta Ice Cream

While we’re sure it’s far from the first time someone has whipped this up, we were first introduced to the magic that is ricotta ice cream thanks to TODAY show co-host Hoda Kotb. The podcast host, author, and journalist stepped up to the blender during a segment of the morning show Hoda & Jenna to demonstrate a healthy-ish treat she makes for her two daughters, Haley and Hope.

“This is my lighter alternative to ice cream I've been making with Hope to accommodate her recent dietary changes,” Kotb says on the TODAY website. “The ricotta provides the creamy texture, while the sugar-free maple syrup lightly sweetens it up. Add sprinkles or your favorite topping before serving.”

Earning a nearly full five-star rating from 89 reviews, fans seem to agree with Kotb and her girls. To make ricotta ice cream of your own, you will need:

  • 2 cups of whole-milk ricotta cheese

  • ½ cup sugar-free maple syrup (or your favorite sweetener, adding more to taste if desired)

  • 2 tablespoons heavy cream (or your milk of choice)

  • 2 to 3 cups of ice

Combine it all in a blender pitcher and blend to reach your desired consistency.  Blend on high speed until creamy and evenly combined, or for about 1 minute.

Garnish as desired with berries, chocolate chips, hot fudge, caramel sauce, sprinkles, nuts, whipped cream, and (of course) a cherry, then sip or spoon like a milkshake.

How to Make Sour Cream Ice Cream

Just one day after Hoda debuted her trick, Chipotle countered with a chef-developed frozen dessert recipe featuring one of their burrito bar condiments. It sounds wild, but it actually works, according to fans who chimed in via the comments. One gave the helpful tip to “place it in a graham cracker crust with some whipped cream, and it’s a definite win!”

In addition to being a James Beard Award-winning chef and Food Network regular, Nate Appleman led Chipotle’s menu innovations for several years before becoming the director of culinary innovations for its sister brand, Farmesa. To display a unique way to make the most of extra sour cream from the fast-casual chain, Appleman hopped on Chipotle’s social channels to walk us through how to make sour cream ice cream.

Since this isn’t a no-churn ice cream recipe, Appleman employs our best ice cream maker choice for the task: the Ninja CREAMi.

To follow his lead, whisk together in a large bowl until smooth:

  • 2 ounces of sour cream

  • 1 ½ cups of whole milk

Then add and whisk until combined:

  • ¼ cup honey

  • 1 tablespoon lemon juice

  • a pinch of salt

Next, pour the milk mixture into the empty ice cream pint, top with the lid, and freeze for 24 hours. Remove the pint from the freezer, take the lid off, pop the pint in the outer bowl, and add the paddle to the outer bowl lid. Lock the lid on, place the bowl in the base, and twist the handle to raise the platform. Select the “Lite Ice Cream” function, and after it runs through the cycle, enjoy straight from the pint or transfer to a cup or cone.

The finished product packs a pleasant amount of tang, somewhat reminiscent of tart frozen yogurt. Because that's the case, we think this would taste incredible, crowned with pomegranate cherry-berry compote or blackberry-lime dessert sauce.
