It's still winter, but Spring feels so close, and in our opinion, it's never too early to start a new season of baking. If you want to test out some recipes for Easter, or just want to trick yourself into thinking it's way warmer outside than it actually is, bake this strawberries 'n cream poke cake. Trust us - you won't be sorry.

We love eating strawberries in any way we can, but they particularly go best with tons and tons of cream, so we turned the classic dessert into a poke cake, and it may be one of the best decisions we've ever made. Bake a box of vanilla cake mix, let cool, then cook a mixture of strawberries, water, sugar, lemon juice, and vanilla. Once thickened, poke holes in the cake and pour the sauce over it. Spread Cool Whip all over the top and serve. Now ask yourself - why have you been dipping strawberries in whipped cream all these years when you could eat both together in cake form? Exactly.
