Cuates means close friends in Spanish. This one is from Convivia Cantina, Valle de Guadalupe at Encuentro. This is a traditional raspado (Mexican snowcone) turned into a cocktail. We wanted to represent southern tropical Mexico with mangos and spice.

Cuates
2 ounces tequila
4 ounces mango mix*
2 cups crushed ice
Fill sundae glass with crushed ice. Mix tequila and mango mix in a tin and shake with ice. Strain over crushed ice and garnish with a whole chile de arbol on top.

*Mango Mix
3 mangos, peeled and sliced
1 chile de arbol
2 cups water
1½ cups sugar
Mix all ingredients in a blender until smooth. Bottle and refrigerate.
