Sloppers for breakfast?: What Pueblo eateries offer them and how to vote for your favorite

Move over pancakes, the hearty breakfast slopper is becoming Pueblo's favorite morning meal.

Pueblo's iconic slopper — that irresistible Pueblo green chile-smothered cheeseburger ― is not just a popular midday or dinner meal. The Chieftain found eight local eateries that offer a breakfast slopper, each with its own flare thanks to the imaginations of the creative chefs behind them.

B Street Cafe's breakfast slopper served with over-easy egg, deep-fried pappas

The cafe's staff was changing the menu and figuring out new items to offer when the breakfast slopper was added.

"Because we won third place in the (Greater Pueblo) chamber slopper contest, we decided to make one for breakfast and it is really good with an over-easy egg on top. We serve it with pappas, sliced deep fried potatoes, on the side," said Ilyssa Francisco, a B Street server.

"We use pork and Pueblo green chiles in our green chile and it is absolutely amazing. It is made fresh daily," Francisco said.

B Street Cafe is located at 121 W. B St. and breakfast is served from 8-11 a.m. on weekdays and until 2 p.m. on Saturday and Sunday.

Cafe Murillo Food Truck has a breakfast slopper on a gluten-free bun

Cafe Murillo offers the breakfast slopper as a specialty item on its menu. It is different than most breakfast sloppers because it features a full bun that is gluten-free.

"Our breakfast slopper has a hamburger, Pueblo green chile, a fried egg and slice of bacon on a full bun and our buns are always gluten-free. It is so good," said Montana Murillo, whose family operates the food truck.

Customers often don't even realize the buns and bread the food truck uses are gluten-free. The Murillo family recipe — developed by Renee and James Murillo and their children Miranda, Marina, Montana and Vicente — has taken shape over the past 12 years since Marina developed celiac disease, an immune reaction to gluten.

"We wanted to make something everyone can enjoy," Montana said.

Cafe Murillo is offering the breakfast slopper from 11 a.m. to 1:30 p.m. Thursday at Trane, 101 William White Blvd.; 11 a.m. to 2 p.m. Friday at City Park, 800 Goodnight Ave., for the tennis tournament; and 3-6 p.m. Friday during the Food Truck Union gathering at Mineral Palace Park, 1600 N. Santa Fe Ave.

Graham's Grill's breakfast sloppers are 'really popular'

Graham's Grill offers the breakfast slopper at both its South Side and North Side Pueblo locations.

Homemade green chile, bacon and grilled beef are the stars of the Graham's breakfast slopper.

"It has cheese and a fried egg on top," said Marisa Maes of Graham's Grill III. "It is really popular."

Graham's Grill II is located at 1749 S. Pueblo Blvd., and Graham's Grill III is located at 2149 Jerry Murphy Road. Both sites are open from 11 a.m. to 9 p.m. daily.

Brues Alehouse has breakfast sloppers for meat lovers and vegans

Brues Alehouse offers breakfast slopper options for both vegan and a meat lovers during its 10 a.m. to 2 p.m. Sunday brunch. Both versions feature chile variations that are "made from scratch using Musso Farms green chile," said Ryan Cambo, general manager for Brues.

The vegan breakfast slopper features a 6-ounce plant-based Impossible Burger patty, topped with vegan JUST egg and smothered with vegan green chile, served on a bed of potato rounds with shredded lettuce and tomato on top.

The traditional breakfast slopper features an 8-ounce Rocky Mountain blend beef patty comprised of 80% angus and 20% brisket, two eggs any way and a four cheese blend on top of hash browns, all smothered in green chile.

"Both breakfast sloppers are very high selling items on our brunch menu, although the sales of the traditional slopper far exceed the sales of the vegan option," Cambo said.

Brues is located at 120 Riverwalk Place.

Romero's Cafe breakfast slopper comes with bacon on top

"Our breakfast slopper is a specialty item and when we offer it, it is pretty popular," said Sheri Romero. "Ours has beans on the bottom, a hamburger with lettuce, tomato, onions and pickles, topped with two strips of bacon, cheese and smothered in green chile."

Romero's serves the slopper with potatoes and a half bun on the side to help customers sop up every last bit of the green chile.

Romero's is located at 1323 Santa Fe Drive and hours are 7 a.m. to 2 p.m. Monday through Thursday and 7 a.m. to 8 p.m. Friday and Saturday.

The Beer Barrel's breakfast slopper 'is like heaven'

Jeremy Montez said his breakfast slopper "is like heaven."

"It has fried potatoes instead of a bun, the burger, cheese, green chile and a fried egg on top. It's so good," he said.

The Beer Barrel is located at 2113 E. Evans Ave. Breakfast service starts at 7 a.m. Friday, Saturday and Sunday.

Mauro's Kitchen's breakfast slopper uses Mauro Farms chile

Mauro's Kitchen also offers a breakfast variation of Pueblo's iconic dish, featuring a traditional slopper topped with an egg and green chile made with Mauro Farms homegrown Pueblo green chiles.

Mauro's Kitchen is located at 2104 N. Norwood. Hours are 11 a.m. to 8:30 p.m. Tuesday through Saturday.
