Skip the Drive-Thru & Make The Pioneer Woman’s Easy Popcorn Chicken at Home

If one of your New Year’s resolutions is to nix fast food, you may be searching for recipes to satiate that fast food craving and that don’t include those unhealthy additives and grease. Ree Drummond (a.k.a. The Pioneer Woman) has a delicious alternative to drive-thru fried chicken that not only tastes better than what’s on the menu at [insert favorite fast food place here], but is so much better for you, too.

Drummond’s Popcorn Chicken recipe starts with a simple breading assembly line for her diced chicken breast. She likes to first season the chicken with salt and pepper and then cover the chicken with cornstarch and beaten eggs. Mixing the cornstarch, eggs, and chicken all in the same bowl cuts down on the number of steps you usually have to do to get the chicken coated in breading.

To get that crunch you love, Drummond breads her chicken with panko crumbs. Panko, a Japanese breadcrumb, creates a lighter, flakier (and sometimes crunchier) crust compared to regular breadcrumbs. When all the chicken is battered, Drummond then fries it up in oil heated up in a cast iron skillet until the chicken is golden brown. Give the chicken a final sprinkling of salt, and you’re ready to eat!
