Six Palm Beach chefs and restaurateurs share their new year's resolutions

For Palm Beach chefs and restaurateurs who work long hours every day most of the year, there’s hardly time to commit to New Year’s resolutions, let alone think about resolutions. But wait: They’re doing just that.

Six of them shared their plans with the Daily News:

“In the year to come, my goal is to exercise more — not to lose weight necessarily, but to be healthier because that’s the most important thing as we get older. I want to walk in the mornings with my wife and basically just move more during my time off. It’s easy to think you’re tired and need to relax when you’re not working, but I’m going to change that. We’ll see how it goes!”

“I think mainly we’ll work hard this year to keep doing what we’ve been doing… We know how hard our customers work and how much they expect from us… We also will continue transitioning our takeout materials to environmentally friendly materials. Being part of a coastal community, we’ve already replaced most plastic items with recycled and biodegradable material. That’s so important.”

“I am planning on totally disconnecting when I can in 2024 while spending some extra time with my three-year-old son. He is growing way too fast… Emails and texts will wait in 2024 while papa and son are sharing moments together.”

“I’ve been on a low-carb diet for so long (three-plus months) and I’ve lost 30 pounds and I can’t help but think that on New Year’s Eve or New Year’s Day I will want to splurge and have a glass of wine or Champagne with people I love and hopefully that will be it! Then I will stay focused on health as the new year progresses.”

“I will spend more time with family no matter what part of the world they live in,” the France native said. “Probably in June or September, my daughter Nicole and I will visit my mother in Alsace, France. My mother has not seen Nicole for five years so this will be special. I’m looking forward to indulging in mom’s food and catching up with everyone.”

“We have been so busy and I think that may be the case for a while, but when the off-season comes, I always make more time than ever for family because there is nothing more important than that. You have to not only make time but commit to it and as a family, this is what we do and it works.”
