Savor the favor: blogger shares Romanian Easter cake recipe for delightful celebration

The Orthodox Christian Easter holiday is approaching, which means it's time to start preparing treats.

Blogger and cookbook author Zoryana Ivchenko shared a recipe for a delicious Easter cake on her Telegram channel on April 5.

"I'm going to start a marathon of my favorite Easter recipes with Romanian pasca, a traditional Easter pastry," she wrote.

"Buttery dough with zesty flavors, juicy cheese filling, it looks like a big, delicious cheesecake. Try it, Romanians know a lot about baking!"

Ingredients

  • 300g flour

  • 200g fatty cottage cheese

  • 3 eggs

  • 100ml heavy cream

  • 100g sugar

  • 60g butter

  • 125ml milk + 1 tsp

  • 25g fresh yeast or 1 tsp dry yeast

  • 1 tsp vanilla extract

  • orange zest

  • lemon zest

  • pinch of salt

Preparation

1. Heat 125 ml of milk. Add the butter to the warm milk. Pour into a stand mixer or a deep bowl. Crack the eggs, add both zests and half the vanilla extract. Sprinkle in the salt, 50 grams of sugar, and crush the yeast. Sift the flour on top and turn the stand mixer on to proof, knead and rise. Alternatively, knead by hand. Let the dough rise for 1.5-2 hours.

2. Divide the risen dough into two parts. Shape one part into a flat cake and place it in a greased round baking dish 20-22 cm in diameter. Divide the second part into three equal parts and roll them into thin sausages about 40-45 cm long. Connect and weave a regular braid. If desired, separate a little dough and weave a flagellum to make a cross for decoration. Spread the dough braid along the side of the mold over the base, leaving the middle empty. Tighten the mold with plastic wrap and leave it in a warm place for 20 minutes.

3. For the filling, crack two eggs. Pour one tablespoon of the egg for greasing. Put the cottage cheese, cream, 50 grams of sugar, and ½ teaspoon of vanilla extract in the bowl with the eggs. Blend everything into a creamy mixture with a blender.

4. Add one teaspoon of milk to the beaten egg, mix, and brush the dough braid. Put the filling in the center of the Easter cake, put a cross on top, if you have one, and brush it with egg. Bake the Easter cake for about 1 hour at 175 degrees until golden brown. Open the oven and let the cake cool.
