The Royal Chef Showed Us How Queen Elizabeth Picks Her Own Berries To Make This Dessert

Darren McGrady was the personal chef to Queen Elizabeth II, Prince Philip, Princess Diana, Prince Charles, and Princes William and Harry—a family with notoriously specific food needs—for 15 years. In 1998, he moved to the U.S.A. where he wrote best-selling cookbooks and founded Eating Royally, a fine-dining catering service based in Dallas, TX.

In the second installment of this limited series, Chef McGrady walks Delish through the royals' favorite recipes from his Dallas test kitchen...while spilling all the most glorious royal tea. We talked all things Queen Elizabeth (again!) this time around.


Our adventures with former royal chef Darren McGrady have led to tons of revelations about our favorite British fam. We've learned that the Queen is a master of portion control who loves herself a good dose of chocolate every so often, for one. In fact, we wanted to know more about her, so we asked what other desserts she is into—it turns out the answer is "ones she can contribute to herself!"

Per Chef, the most senior of royals enjoyed a stroll with her sister—Princess Margaret—through the grounds of the Balmoral estate every so often. The two of them loved hopping into the raspberry cages and picking a bunch of fruit (like, pounds and pounds of fruit) for the chefs to play with, primarily ahead of St. Georges Day, a celebration of knighthood the Queen presides over every year.

The resulting dessert? A cream-topped raspberry fool resembling the Union Jack.
