A Renowned Mustard Sommelier Is Hosting a Multi-Course Mustard Dinner in the Mountains

There are specialty dinners, and then there is the Maille Dinner at Goldener Hirsch, Auberge Resorts Collection, which honors the best condiment of them all, mustard.

On Saturday, Aug. 20, the luxury resort in Deer Valley, Utah, is hosting a one-of-a-kind dinner event exploring French-influenced cooking, all inspired by Maille's heritage as the go-to French dijon brand. And it's crafted by none other than the brand's mustard sommelier (real job), chef Brandon Collins.

In collaboration with the resort's executive chef Nicolas Lebas, Collins has created a menu highlighting mustard with every course, using seasonal and local ingredients as the vehicle, all cooked using various traditional French techniques.

The meal kicks off with handcrafted cocktails, including a Maille Old Fashioned made with bourbon, bitters, orange, cherry Old Style syrup, or the Mustard and Brown Butter Rum, which comes with rum, apple cider, rosemary simple syrup, and a touch of mustard for the right amount of tang.

Following cocktails, guests can dig into the amuse bouche, which includes smoked beef tongue Gaufrette, squash pudding with mustard crumble, and foie gras mousse. The first course consists of a salad of roasted fennel and picked grapes (drizzled in a hot honey daikon dressing, of course), followed by wood-grilled prawns with a dill mustard carrot purée. Then, the meal moves on to braised short ribs with pomme aligot (which are delightfully cheesy mashed potatoes), and finishes with a sweet mustard corn cake.

There will also be plenty of sourdough pretzel rolls with mustard butter to munch on between courses and milk chocolate truffles with apple-mustard compote post-meal, if you're still feeling peckish.

While the dinner should be enough to make you book a flight to Utah right now, the resort is also hosting an experiential foraging workshop with the dinner hosted by chef Brandon and a local guide, which offers an in-depth look at the local flora and herbs surrounding the mountainside property. Once the walk is complete, chef Brandon will demonstrate how to use mustard as a secret ingredient and flavor enhancer in various ways, so you can take a few sweet and spicy tips home with you.

Though the dinner is undoubtedly the main event, you may want to book an extra day or two to experience everything else the chalet-style hotel offers. Designed by award-winning architect Tom Kundig, the resort sits just steps from the Silver Lake Express lift, making it a prime home base for exploring the mountains regardless of the season.

Guests can choose from one, two, or three-bedroom residences, all outfitted in Austrian-inspired decor, which will make you want to run out into the verdant alpine setting to sing "The Hills Are Alive" over and over again (no need to join a convent or become a nanny to seven children though). And, August is the absolute best time to take advantage of the resort's off-ski season mountain activities, including hiking, biking, and fly-fishing.

If you can't make the mustard-themed dinner, the resort hosts several other worthy food and beverage-focused experiences, including pretzel-making classes and Bavarian beer tastings.
