We Reinvented The Taco And Kids Are Freaking Out

The debate is no longer hard shell taco vs. soft taco. It's now taco vs. taco cup. And for now, at least with the kiddos, taco cups are winning. They're fun, portable, customizable, and crazy easy to make.

1. Cook your filling. We sautéed ground beef with taco seasoning, because that will never lose. But feel free to use shredded chicken instead.

2. Trim your tortillas. It doesn't matter if you use corn of flour. The most important part is that they should be a couple inches bigger in total diameter than the widest part of the muffin cups. An easy way to make them smaller is with a large biscuit cutter, but you could also use a small bowl and a paring knife.

3. Make the tortilla cups. Press the tortillas into the cups, folding as necessary. This step is easier if the tortillas are warm! (To warm them up in the microwave, place tortillas on a microwave-safe plate and cover with damp paper towel; then, microwave for 30 seconds, or until tortillas are pliable.)

4. Fill the cups. Fill each cup with ample cooked ground beef then sprinkle shredded cheese onto each one.

5. Bake until tortillas are toasted and hold their shape. 10 minutes is your magic number.

6. Load them up! With as many, or as little, fillings as your heart desires.
