Ree Drummond's Low-Carb Swap for a Healthier Burger Is Actually Genius

As if we needed any more evidence that the Pioneer Woman's next cookbook is going to be health-focused, Ree Drummond just shared her hack for making beefy burgers and sandwiches low-carb. Leave it to the Pioneer Woman to find a way to make something as indulgent as a cheeseburger feel much healthier than normal.

The Food Network star recently published a recipe for cheeseburger sliders, which already could be seen as an better-for-you burger alternative because of their smaller size. But Drummond decided to ditch the burger bun and swap it out for something even better.

Drummond takes stemmed Portobello mushrooms caps and grills them to perfection before filling them with burger meat, Swiss cheese, tomatoes, lettuce, Dijon, and a few crispy jalapeños.

"One of my favorite things I've cooked recently," Drummond shares on her Twitter page. "Mushrooms instead of buns! Mushbuns?"

There are many clever ways to cut out carbs—such as using cauliflower rice to make sushi, for example. But we have to give credit where credit's due: Drummond's use for whole portobello mushroom caps may be the best low-carb swap we've seen, and the applications are endless. Nearly all of our 35 plus healthier burgers could be served hot on a "mushbun" and we would jump for joy.

Many Pioneer Woman fans have speculated that the Food Network star is ready to tackle healthier dishes in the upcoming year. Last year, Drummond shared on her blog that she's gearing up to release a new cookbook this fall, and asked fans directly if they had any thoughts on what they would like to see next. Over 1,000 fans left comments on the post: including reader Kristen Adkins, who asked for, "a cookbook with lighter versions / low carb recipes. Keep everything else the same. I love the step-by-step pictures!"
