Rachael Ray Calls Her New One-Pot Recipe a 'Vegetarian Winner'

Rachael Ray is ready for soup season, and we are so excited to try her new recipe! The Food Network chef just shared a vegetarian soup that is packed with nutrients, bursting with flavor, and made all in one pot — because dinners with easy clean up just taste better, don’t they?

“Warm up with my mushroom-and-kale barley soup ♨️ — a definite vegetarian winner (just use vegetable stock) ✌️,” Ray captioned the post. She also shared a photo of the soup, which is made with kale, two different kinds of mushrooms, barley, Pecorino Romano cheese, and other ingredients. It looks light and fresh, while still being heart enough to fill you up.

To make this delicious dinner, start by boiling the barley. You could do this in the same pot, but if you boil it in a separate saucepan while you prepare the soup, you can make the recipe in “just under 30 minutes,” according to Ray.

Use the main soup pot to brown the mushrooms and cook the other ingredients (and if you don’t have one, Ray has her own line of pots and pans you could try). Once everything is added to the pot, bring the veggie-filled soup to a boil and let it simmer. You’ll add your previously made barley at the end and serve it with fresh cheese on top. You could even dip crusty bread in it, too!
