There seems to be a secret competition going on among food brands to see which one can pack their product with the most healthy stuff and still get people to buy it. (Jessica Seinfeld: Are you spearheading this?) It's how we got to a place where granola bars have full servings of fruits and vegetables and ice cream is made with spinach and cauliflower.

Uh, yah, that wasn't a typo.

Florida-based ice cream maker Jessica Levison posed this question to herself: "Wouldn’t it be rad if veggies tasted like ice cream?". She started tinkering with recipes and ultimately landed on a line-up of five classic flavors - all of which sneak veggies into every bite. Are you freaking out?

Levison specifically choose veggies with mild flavors, and she claims you can't taste them in the ice cream at all. It's just the creamy, indulgent stuff you're used. The chocolate flavor is made with cauliflower, the cotton candy pint is made with beets, the mint chip ice cream is made with spinach, the strawberry one has carrots in it, and the vanilla flavor has hidden zucchini.

You can't get Peekaboo Ice Cream in stores yet, but it retails online at peekabooicecream.com for $8 a pint.
