For years, I avoided meat. The grocery store beef, chicken, and pork I had grown up on was too gristly, too tough, too bland, the kind of factory-farmed stuff that felt more perfunctory than palatable. It needed to be slow-cooked in the Crock Pot, drowning in some Campbell’s Soup Cream of Whatever for hours and hours until it became edible, at which point the meat would merely become a vessel for whatever sauce I’d put on it. Beef? Sure. Pork? Who knew!

It wasn’t until adulthood when I moved to New York City and had the best restaurants in the world within walking distance that I began to appreciate that cooking is just as much about the quality of the ingredients as it is about the technique. In fact, I specifically remember the moment I fell in love with beef: a perfect steak frites at the now-closed La Mangeoire, around the corner from my first Manhattan apartment. It was aromatic, had a beautiful texture, was juicy without being greasy, and seasoned with just enough salt and pepper to bring out the meat’s natural flavors. It was then that I learned how good beef should taste like beef—and it suddenly felt like my black-and-white gustatory world had burst into color.

Of course, there’s a big difference between the meat one finds in a fine restaurant and the meat one finds in the average American grocery store. Not everyone can access New Zealand lamb, Japanese Wagyu, or even properly grass-raised, grass-finished meat in their everyday life.

That’s where online butcher shop Porter Road steps in. Based in Kentucky, the company works with a network of local farmers in Kentucky and Tennessee to implement the highest possible standards of animal husbandry and regenerative agriculture, resulting in quality that’s eons beyond what you’ll find at your grocery store. Pigs are given plenty of space to luxuriate and forage outdoors. Cows are fed healthy diets and are never given hormones or antibiotics. And with the exception of some ground beef, sausages and larger roasts, meats are shipped fresh and never frozen. What that means for us, the home chefs of the world, is that a fine-dining experience is now possible wherever Porter Road ships (currently just the lower 48 states), because when you’re working with ingredients this good, it’s impossible not to be inspired.

You can order á la carte, or you can subscribe to a curated butcher’s choice box every two, four, or eight weeks. And with a selection of their enviable cuts marked down 20 percent from now through Cyber Monday, there’s absolutely no reason not to indulge in some of the best meats around—whether it’s for yourself or for somebody else.

Prepare them however you like, but personally speaking, I feel like a pinch of salt and pepper and maybe a drizzle of olive oil are enough—no Cream of Whatever necessary.
