These Pops Are The Healthiest Way To Get Your Banana Split On

The grey New York sky and the looming weekend snow forecast has me seriously missing summer. Cold weather is fun in December, not in March. I've had my fill of cozy soups and hearty casseroles. I need a ice cream. Or better yet, a banana split.

We fell in love with The Kitchen McCabe's Banana Split Pudding Pops on Pinterest. You can't help but smile when you see the (maraschino) cherry on top. While recipe seems awesome, we wanted to make something even easier. So we stuck popsicle sticks into bananas, froze them, then dipped them in melted chocolate and sprinkles. Adorable doesn't have to be hard.

It'll take about 2 hours for the bananas to freeze solid. Waiting is the hardest part. If you don't have the patience, a chocolate-dipped banana ain't too bad either (there's always money in the banana stand, after all). Before dipping the pops in the melted chocolate, whisk some coconut oil into that bowl of liquid cocoa. It will give the chocolate a nice glossy sheen and, when bitten, will crack like a magic shell.

Obviously these pops are missing ice cream. But you won't miss it. If you've ever had banana ice cream, you know that the creamy frozen fruit is a pretty great alternative. Especially when it's dipped in chocolate and topped with a tower of whipped cream.
