ABOUT RESTAURANT INSPECTIONS

This is a snapshot of the inspections conducted by the Polk County health department.

Twice annually, licensed restaurants receive unannounced inspections that focus on food temperatures, food preparation practices, worker hygiene, dish-washing and sanitizing, and equipment and facility cleanliness.

Violations: Restaurant scores are based on a 100-point scale. Priority violations deduct 5 points, and priority foundation violations deduct 3 points. Violations recorded on consecutive inspections result in point deductions being doubled.

Scoring: Scores of 70 or higher are considered compliant. Restaurants scoring below 70 must be reinspected within 30 days or face closure or other administrative action. Restaurants display a placard by the entrance to indicate whether they have passed their last inspection.

Food on display is not protected from contamination, specifically: Bagels, cream cheese and other ready to eat food items are sitting out with no cover on an open table for continental breakfast - no sneeze guard. Point deduction: 3.

Food employees are not washing their hands as often as necessary, specifically: Operator cracked a raw egg with gloved hand then grabbed a handful of green peppers from prep unit with same gloved hand. Point deduction: 5.

Food-contact surfaces of equipment and utensils are not sanitized after cleaning, specifically: Operator washed and rinsed a metal pan within the same sink and then set metal pan in clean dish area without sanitizing. Point deduction: 5.

Potentially hazardous food is not maintained at proper hot or cold holding temperatures, specifically: Container of half and half sitting in bowl of ice in server area is at 51 degrees Fahrenheit. Several items in kitchen prep unit are between 45 to 48 degrees (noodles, tofu, garlic and green peppers). Point deduction: 5.

Raw or ready-to eat food is not properly protected from cross contamination, specifically: Several cases of raw ground beef are stored above lettuce and beside ready to eat lunch meat in the walk-in cooler. Point deduction: 5.

Refrigerated, ready-to-eat, potentially hazardous food has not been consumed within the required time period or is not properly date-marked, specifically: Ready-to-eat chicken in the prep unit is date marked June 2, over seven days old. Point deduction: 5.

Working containers of poisonous or toxic materials are not clearly labeled, specifically: A spray bottle with chemical cleaner in it is stored in the bar area with no markings or label to identify the contents. Point deduction: 3.
