This Pizza Crust Is Made Out of Chicken

There are some moments while brainstorming recipes at Delish when I feel like I've seen it all and nothing can surprise me. And then I come across something so bizarre, I wondered if it's perfect for us - or I've gone too far. As the low-carb craze continues, we decided to test out an Internet recipe for the popular low-carb high-fat Keto diet: chicken crust pizza.

Take a few seconds to process: Chicken. Crust. Pizza. Pizza crust made out of ground chicken, a little cheese, garlic powder, salt, and pepper. You pat it into crust-looking circles (be sure to grease your hands with cooking spray first; this mixture is sticky), then place them on a parchment-lined baking sheet and bake until the chicken is cooked through and golden.

I treated mine like barbecue chicken pizza (the CPK version is my fave) by slathering the "crust" with barbecue sauce and topping with mozzarella, gouda, red onion, green onion, and a drizzle of ranch. I was worried the crust would get soggy while it bakes, but it stays sturdy enough to hold in your hand like a personal pizza. The result is way better than I ever thought it could be: It's flavorful and light and doesn't weigh you down like regular carb-filled crust does. Whether you're into testing out keto or just looking to ditch carbs, this recipe is worth a try.
