Pioneer Woman Shared a New Take on Meatloaf That Your Kids Will Love

Meatloaf may not sound exciting, but when prepared correctly, it’s a tried and true comfort food. We’ve all eaten it, and while some meatloaf is arguably better than other meatloaf, it generally all tastes pretty similar — until now. The Pioneer Woman just shared a delicious and novel new meatloaf recipe that we’ve never seen before and your kids are going to love it.

Say goodbye to that dry, mealy loaf slathered in ketchup, burnt on the sides, and rare in the middle, and say hello to a new meatloaf that your kids will devour — The Pioneer Woman’s Cheeseburger Meatloaf. This is a stick-to-your-ribs meal that spins traditional meatloaf into your favorite burger with the addition of bacon, chunks of cheddar, and all the burger fixings.

Of course, Drummond keeps the ketchup in her recipe because it’s a classic ingredient. “I don’t know how anybody eats meatloaf without ketchup. I think it makes for the best meatloaf sauce,” she said in the Food Network segment. “I’m going to give this ketchup sauce a cheeseburger spin by adding some yellow mustard.” She also adds some grated onion, salt, and pepper to the sauce before moving on to the meat itself.

A savory mixture of ground beef and milk-soaked bread mixed with eggs, onion, chopped bacon, more ketchup and mustard, and a good helping of sharp cheddar is all Drummond uses to ramp up the flavor.

When it comes to forming your meatloaf, forget the loaf. According to Drummond, a “flat rectangle” is the way to go. “The more dome your meatloaf has to it, the longer it takes to cook and the harder it is for it to cook evenly,” Drummond says. Once your meatloaf is formed, add a bit of the sauce, cover with foil and stick it in the oven. After an hour, remove the foil, add the rest of the sauce, cook for another 40 minutes, then add more cheese and cook only long enough for it to melt.
