The Pioneer Woman’s S’Mores Bars Are Perfect for Summer Nights — No Campfire Needed

Nothing screams summer more than taking a bite out of a delicious s’more. You can taste the campfire in the perfectly charred (or lightly toasted — we all have our preferences!) marshmallow, and the mix of melty chocolate and warm graham cracker just can’t be beat. But if there’s no campfire in sight the next time you’re craving that trio of deliciousness, you can make Ree Drummond’s S’mores Bars instead. They have all the same great flavors as the s’mores you love from childhood, but they can be toasted up right in your oven.

“If you don’t have a campfire but find yourself craving s’mores, then you’re in luck!” the caption of the official Pioneer Woman Magazine Instagram page reads. “These s’mores bars are toasted right in your oven. They have a buttery graham cracker crust, fudgy chocolate filling, and a toasted marshmallow topping.”

And the best part is that you can make these bars ahead of time so you can just grab and go when the s’mores craving hits after dinner.

The recipe starts with blitzing graham crackers in a food processor. Drummond writes on her website that you can actually use any cookie base for this recipe, similar to a cheesecake. To the cookie crumble, add melted butter and sugar, and when mixed together, press the crumble into a prepared baking pan, as you would a traditional graham cracker crust.

As the crust cools, melt your chocolate of choice (Drummond always opts for milk chocolate) over a double boiler on the stove, adding sweetened condensed milk to thicken it up. Then, pour this mixture over the cooled crust and then scatter your marshmallows on top of this chocolate layer.

Place the bars under your oven’s broiler and toast the marshmallows for about two minutes, then remove the bars and top them with more crumbled graham crackers. Set the bars by placing them in the freezer for about 20 minutes then you’re ready to slice and serve.
