The Pioneer Woman (Ree Drummond) is known for her easy and delicious recipes, which we love to make during busy weeknights. But her latest is actually a spin on a Thanksgiving side dish — and it’s perfect for families with picky eaters.

Stuffing is a mix of bread and vegetables that families make in a variety of different ways. In a new video posted to the Food Network YouTube channel, Drummond shared that stuffing is one of her favorite Thanksgiving recipes “of all time,” adding that she normally bakes it in a big pan or by stuffing the turkey with it. You know, the traditional ways! But for this delicious twist, she’s going to bake it in muffins — and I can already see my kids actually eating it this year.

Drummond starts by cutting French bread into cubes and drying them out in the oven. Next, she adds veggies, spices, and stock into a saucepan of melted butter. Once it’s heated up (and steaming!), she pours the stuffing mixture into the bowl with the bread.

“You just toss, and you keep tossing until you can’t see any more liquid in the bottom of the bowl,” Drummond explains, as the bread soaks up the liquid. From there, you stuff it in a muffin pan and bake. It’s seriously that simple!

“Look at these beauties,” Drummond says as she plates the Stuffing Muffins. “They are everything that’s wonderful about stuffing but in such cute little packages.”

The finished muffins look so fresh, golden brown, and yummy. It seems super kid friendly, especially for kids like mine who won’t go near any casserole-like dish with tons of ingredients. It’s easy-to-eat muffin shape is already portioned out for all your guests, making planning and serving a breeze.

“I’ve just died and gone to Heaven!!!! Not coming back ‘til I’ve eaten my body weight in these…” one person commented on the video.

“Very good recipe 👍,” another confirmed.

Others offered their own takes on this recipe, with one person sharing, “My family have been making stuffin’ muffins for years and years now! It’s always a hit! We put dried cranberries and pecans and green onions!”

Drummond’s recipe is a great base, and you can customize it based on your family’s traditions. Will definitely be trying this year!
