Every year, we look forward to seeing some of our favorite seasonal treats return to store shelves. At the top of the list are Pillsbury Shape Sugar Cookies—ready-to-bake, pre-cut sugar cookies that feature a seasonal design in the center. In my childhood, they were called slice-and-bake cookies, but the difference doesn’t affect the sheer nostalgia I and many other people have for these cookies. The hardest thing about making them this year seems to be getting your hands on them.

The Shape Cookies are available seasonally, meaning that right now we’re seeing pumpkin and ghost cookies. Even though the calendar just turned to October, consumers across the United States and Canada are complaining that the iconic Halloween-themed cookies are getting hard to find.

Reddit users have threads devoted to locating the cookies in nearby stores. On TikTok, creators are reporting similar issues.

Besides the nostalgia element, part of the appeal is the seasonal design. The ghost and pumpkin cookies will be replaced by the Thanksgiving-themed cookies which then be replaced by wintry snowmen and reindeer.

Luckily, our Turkey Shape Cookies are hitting shelves now and more seasonal shapes like Snowmen and Reindeer won’t be far behind!”

The social media hubbub noting the cookie’s scarcity isn’t new (there are plenty of threads from previous years with the same issue). But Pillsbury's representative hit on a big reason we believe these cookie dough packages are flying off shelves: Social media is full of new and creative ways to use the dough in a variety of home-baked goodies.

While they're delicious on their own, some users have been nesting one of the sugar cookies inside a chocolate chip cookie. TikTok creator jordan_the_stallion8 said of the combo, “These are two different cookies but they go together so well…If you can find these sugar cookies anywhere give it a try.”

Pillsbury Shape Cookie-Crust Cheesecake

If you are a cheesecake lover, this one’s for you. TikTok users are turning a batch of sugar cookies into a crispy, festive crust for cheesecake. To make it, fill the bottom of a pie pan with the Pillsbury Shape Cookies close together, then bake as directed. After baking, the cookies should have formed a cohesive, giant cookie crust. Then, fill with your favorite no-bake cheesecake filling, chill, and enjoy.

While you may have made ice cream sandwiches with chocolate chip or chocolate cookies, social media users are experimenting with the iconic Pillsbury Shape Cookies. The cookies are baked closely together (using a similar method to the one used for the cheesecake crust) using a baking sheet or brownie pan. You’ll need two cookie layers, so either repeat this step or use two pans the same size. In another pan of the same size, spread out softened ice cream and place it back in the freezer to chill. Then, all that’s left to do is assemble, cut into pieces, and enjoy.
