This Peppermint Poke Cake Is Like Peppermint Bark But Better

'Tis the season for holiday potlucks, and if you're like me, you're already starting to run out of brilliant ideas for quick holiday sides. Not to mention that this time of the year is the busiest for most, so making something difficult is totally out of the question.
There's always a plentiful array of Christmas cookies at parties, but rarely is there a cake. Why not mix it up and make this ridiculously good peppermint poke cake? It's sort of like chocolate cake and peppermint bark had a baby, and I guarantee it'll be gone long before the cookies.
Start with a boxed chocolate cake mix, but give it a boost with peppermint extract. We used a teaspoon, but if you're worried it'll be too strong for your liking you could use half a teaspoon, or cut it all together! When cool, poke it all over and fill it with liquid magic (also known as marshmallow fluff and crushed peppermint). Frost with whipped topping, sprinkle with more crushed peppermints and drizzle with chocolate sauce. Fast, easy, and festive AF!
