A pastry chef adorably teams up with her grandmother to make sweet Colombian-style arroz con leche
Cookbook author and pastry chef Valentina Mussi (@sweetportfolio) is constantly inspired by her Colombian culture – and it shows in her cooking. In this episode of ITK: Family Style, Valentina joins her grandmother in the kitchen to make a sweet Colombian-style arroz con leche, which is a rich rice pudding dish.
“Every region has its own kind of cuisine and its own dishes that they’re known for,” Valentina says of Colombian food. “Overall, they’re all delicious.”
Even though Valentina says that her grandmother doesn’t use exact measurements when making arroz con leche, you can try a dish similar to theirs. Scroll down for the recipe.
How to make arroz con leche
Ingredients
1 cup long-grain white rice
4 cinnamon sticks
2 cups water
4 cups milk
Pinch of salt
2 tablespoon butter
1½ tablespoons vanilla extract
1 cup sugar
12 ounces sweetened condensed milk
Instructions
1. Add water and cinnamon sticks to a saucepan. Bring to a boil and cook for ten minutes. Discard cinnamon sticks.
2. Place the rice into the cinnamon water and cook over medium heat for five minutes. Add salt, butter, vanilla extract, sugar and two cups of milk. Stir to combine, then cook uncovered for fifteen minutes.
3. Reduce heat to medium-low. Add in the remaining milk and condensed milk. Stir with a wooden spoon to combine. Continue to cook for an hour and fifteen minutes or until the rice pudding thickens to the desired consistency.
4. Once cooked, stir well and remove from heat. Let it cool to room temperature, then refrigerate for at least one hour or overnight.
