As someone who has been cooking since my mother conscripted me into her catering business when I was still just a kid, I’ve been able to use a wide range pans the last few decades. From the Calphalon she loves to the cheap garbage I had after college to the collection I’ve been amassing myself over the last decade or so. And in recent years, the pans I’ve really come to use most—whether i’m sautéing, braising, roasting, or baking—are my Hestans. This Black Friday will give you the opportunity to add some of the company’s cookware to your collection, as it offers its full range of pots, pans, and accessories for 20 percent off through Cyber Monday.

I’ve come to rely on Hestan pans in much the same way Michelin three-starred chefs Thomas Keller and Corey Lee have. Many of Keller’s restaurants rely on the brand’s cookware and you’ll also fine Hestan in Lee’s legendary restaurant Benu. Hestan offers outstanding durability, quick heating, precision and even heat distribution. For instance, the 11-inch CopperBond skillet has been a beautiful workhorse in my kitchen because of the five-layer bonded construction and copper core that leads to effective conductivity. That means superior browning for better flavor, while still maintaining control. When I’m cooking a steak I am able to get a hard, even sear that outperforms other brands I currently have at my disposal. And when it came time to clean, there was another little detail that came in handy: The rivets for the handle are flush with the inside of the pan, making scrubbing that much easier.

The 9×13 OvenBond Rectangular Baker has been a go-to for brownies and bar cookies as well as my favorite pan for baked ziti because it conducts heat so evenly in the oven and looks great as a serving dish. And I get similarly excellent performance out of my half-sheet pan, where one day I’ll roast a spatchcocked chicken on it and the next I may buff it up and use it as an elegant silver serving platter. And a recent favorite pan I’ve added to my collection is the new Copper Induction Dutch Oven, a gleaming piece of cookware that adds a little bit of regal flare to my kitchen when its deployed for braises.

All these pans and more—including Thomas Keller’s signature set of cookware—are available currently available for 20 percent off at the Hestan Black Friday sale.
