Paleo Baking 101: Tips and Tricks From People Who Do It for a Living

When you follow a Paleo diet, you rely on lean proteins, fresh fruits and veggies, and healthy fats from foods like nuts and avocados. Generally speaking, you ditch processed foods, grains, sugar, and all unnatural ingredients.

But does that mean you have to also ditch baking tasty snack? Nope! Not necessarily, according to EKG Project, a New York City company that is aiming to make healthy, inexpensive, nontoxic food options available everyone (and, for real—just look at the Paleo snacks they offer!). Here are some of founding partners Emily Farley, George Kuan, and Gina Cavallo’s favorite tips for whipping up Paleo-friendly baked goods

1: Allergic to eggs (or just don’t like them)? Substitute organic, unsweetened applesauce. It acts as a binder in baking (just as eggs do) and also provides moistness.

2: Paleo recipes often call for coconut oil. But when it’s added to cooler substances—such as eggs—the oil can solidify, which makes it harder to distribute evenly. Pro tip: Melt it before adding it to your batter.

3: If there are berries in your recipe that are out of season, head for the frozen aisle. Organic, frozen blueberries can go straight from bag to batter to oven.

4: If you’re short on time (who isn’t?) and want to make desserts for the holidays all at once, freeze your batter. The EKG Project recommends placing the goodies in the freezer once they’re in their final shape (cookie, brownies, and so on), so they can go directly into the oven when you’re ready.

5: If you don’t have access to Paleo baking ingredients (almond flour, coconut flour, arrowroot flour, raw honey, organic maple syrup), check out your nearest big-box retailer —think Costco—or look online.??Often these staples have low prices. And, hey, right-to-your-door delivery is always a plus.

6: Different brands of the same ingredient may taste and feel very different, according to the EKG Project. So if your recipe doesn’t result in exactly what you were hoping for, don’t give up—just try another brand.

7: Sweets are delish, but it’s important to eat them in healthy quantities. The EKG Project recommends keeping body alkaline—in other words, not eating too much sugar. A good truck? Add a little baking soda to your water.

8: Make sure you bake your Paleo goodies on bleach-free sheets, which keeps any possible chemicals in your pan’s liners from leeching into your recipe.
