Padma Lakshmi Just Shared Her Tasty Version of Bhel Puri—and It’s Deliciously Simple

It’s no secret that Padma Lakshmi is one of the most dependable sources for a quick and easy recipe. The host of Taste the Nation is always pulling together simple, fresh snacks and meals, from Peanut Butter & Pomegranate Toast to delicious Tandoori Chicken Salad.

Lakshmi shares many of these tasty recipe ideas on Instagram, where she gets busy in the kitchen making fun dishes like her cheesy, punny chaat-chos or her cozy rice pudding. This week, Padma leveled up her snack game by sharing a bhel puri recipe that you can pull together in just a couple of minutes.

Bhel puri is a kind of chaat, or savory Indian snack. Bhel puri combines delicious fresh veggies with puffed rice, sev (a thin, crunchy noodle) and chutney for a quick, snackable bowl. (Our version of Bhel Puri also includes roasted chickpeas and peanuts for an extra crunch factor.) The only drawback, as Padma notes in her Instagram caption, is that bhel puri should be eaten right away. If you leave the ingredients to mingle too long, the puffed rice and sev will lose their crunch—so this dish isn’t one you’ll want to meal prep in advance.

To copy Padma’s recipe, you’ll need diced tomatoes, chopped cilantro, diced red onion, diced green mango, diced green chiles, pomegranate arils, date-tamarind chutney, green chutney, papdi, lime, puffed rice, sev and spices. We recommend our recipe for Kothmiri Chatni (Cilantro Chutney) for the green chutney, which should be fresh, bright and perfectly spicy.

You’ll mix all of the wet ingredients together first, then add spices to your taste. Padma opts for a pinch of salt and sprinklings of amchur and Kashmiri chili powder. Amchur is a fruity seasoning made from dried green mangoes while Kashmiri chili powder is a rich red powder with mild heat. Once you’ve squeezed some lime juice into the initial combination of fresh and juicy produce, give everything a good seasoning and combine the ingredients well. Then add the puffed rice and sev and give it one more toss. Adding these crunchy ingredients last will help to keep them dry and crisp. Dish it up into a few bowls to share, and you’re all set.

If you want to make this bhel puri recipe part of your menu plan for the week, consider making Padma’s chaat-chos, too. The cheesy fusion of chaat and nachos uses many of the same ingredients, and Lakshmi says she used the leftover bits and bobs in the fridge to put together her bhel puri. You may even want to toss in another diced veggie, if you have some produce hanging out in your refrigerator door. This simple, adjustable recipe is a pretty tasty way to wipe out your fridge and offer up a snack everyone can enjoy.
