Common Symptoms Associated with E. Coli Infections

The USDA’s Food Safety and Inspection Service (FSIS) first discovered the E. coli contamination following a routine test where the meat tested positive for STEC O103.

Those infected with STEC O103 can become ill within two to eight days after consumption. Common symptoms can include diarrhea and vomiting. Typically, treatment involves rehydration without the use of antibiotics. Recovery time is usually within a week, but some cases can be more severe and possibly lead to hemolytic uremic syndrome (HUS), a type of kidney failure, with symptoms that include easy bruising, paleness in the skin, and low urine output. HUS is more common in children under 5 years old or those with weakened immune systems, but anyone who experiences these symptoms should seek emergency medical care right away.

It's always important to make sure raw meat is cooked properly, which the FSIS advises should reach a temperature of 160 degrees F (71 degrees C) to kill harmful bacteria.
