This Oceanfront Hotel in Mexico's Baja California Has a Stunning New Garden Restaurant and Rooms With Private Plunge Pools and Beach Views

The idyllic Hotel San Cristóbal Baja in Todos Santos, Mexico, just debuted a garden-to-table restaurant and brand-new suites.

The small town of Todos Santos, Mexico, which is just an hour north of Los Cabos on the Pacific Ocean side, has become a culinary haven thanks to its incredible seafood. And one of the town’s most notable hotels just debuted a new dining concept that adds to the area’s allure with foodies.

On November 16, Hotel San Cristóbal Baja, by the trendy Bunkhouse Hotels, opened the doors of Cosecha, an organic eatery, nestled directly in the property’s lush garden, from which many of the ingredients are sourced.

Hotel San Cristóbal has always been a culinary destination and a beautiful place our guests to relax and unwind, surrounded by the beach and mountains,” said Thelma Esquitín, the hotel’s general manager, adding that about 45 percent of the food served on property is prepared with produce grown there. “Cosecha, which translates to ‘harvest,’ elevates our ever-providing Earth and our role as caretaker in this thriving ecosystem, especially that of Todos Santos.”

The menu includes family-style dishes, including salads and freshly caught whole-cooked fish. Some of the highlights are corn esquites served with fried shrimp and slow wood-fire baked Barbacoa de Picaña with salsa, pickled onion, corn tortilla, and lemon. Patrons can pair their dishes with a selection of local and regional wines, as well as a few international picks. The cocktail program also stands out with its hyper-local approach, where all herbs and infusions come from the hotel’s garden.

Esquitín’s favorite is The Bugambila, a tequila and bougainvillea flower-based cocktail “inspired by the colorful harvest vegetation,” she explained.

The alfresco restaurant is at the end of a quaint plant-framed pathway. The dining space is designed to celebrate its setting and the laid-back culture of the region. Think rustic wooden tables with ocean-inspired teal tile made in Guadalajara, chairs with woven palm backing, and plenty of natural materials.

In October, Hotel San Cristóbal also added a new room category. Six of the property’s 32 guest rooms now have private saltwater plunge pools, sweeping ocean views, and built-in shaded outdoor sofas and sunbeds, providing “a more elevated stay option for those seeking a truly intimate, tranquil escape,” according to Esquitín.

The hotel keeps its guests busy by offering a range of community-driven experiences such as surfing, mezcal tastings, and traditional medicinal harvesting classes. Rooms start at $433 and you can book your stay at bunkhousehotels.com.
