An NYC Rock 'n' Roll Institution Steps Into Its Second Act

Once known as the hangout for some of the world’s most talented musicians, the Hotel Chelsea continues to evolve into one of NYC’s hospitality hubs.

Since 1885, Hotel Chelsea has dominated the streetscape on West 23rd Street in the heart of its eponymous Manhattan neighborhood. The 250-room hotel has gone through many transformations, most notably as a rock 'n’ roll haven for in the 1970s, '80s, and '90s. Now, with a recent overhaul, the hotel is embracing its new identity: a New York City dining hotspot.

After a multi-year remodel that saw the entire property revamped, modernized, and turned into a luxury hotel, a new restaurant has opened on the first floor and it’s drawing plenty of attention. Café Chelsea blends classic New York with an overall Parisian flare, embracing the uniqueness of the property with artwork by former residents adorning the walls, but with a French sensibility highlighted in the cuisine.

Once famed as the bohemian stomping grounds for some of the biggest names in rock 'n' roll and literature history — Janis Joplin, Alice Cooper, Bob Dylan, and Mark Twain among many others — the Hotel Chelsea has transformed into one of New York’s premier luxury hotels. After reopening in early 2022, the hotel continues its evolution with the opening of Café Chelsea.

From the exterior, guests are beckoned by a quaint patio shrouded from the hustle of the street by an overflowing potted garden. Step through the front doors and the space comes alive. Guests stand at the packed bar sipping craft cocktails while waiting to be seated. Banquettes line the room, filled with people engaged in boisterous conversations. Head to the back and into the dining room to see the Art Nouveau space on full display. There’s ample seating among the café tables and booths but the space doesn’t feel too crowded. There’s an energy that’s engaging without being oppressive, and then there’s the food. 

Dishes prepared by executive chefs Derek Boccagno are the ideal mix of deliciousness and artful plating with a flair that’s not overexaggerated. Take the Ravioles du Dauphiné — a large ravioli split into mini bites — which is a unique, mouth-watering touch by Boccagno. The menu includes French favorites like duck and pork terrine, steak tartare, and a caviar spread with chips and creme fraîche. And don’t sleep on the goat cheese croquettes, knowing a double order probably isn’t enough.

With so many standout restaurants in New York, it can be hard to know when something is worth your time and meets up to the hype. At Café Chelsea, the warm hospitality, swanky décor, and standout menu make this restaurant worth paying a visit.
