How much work goes into selling tri-tip at the Clovis Rodeo?

CLOVIS, Calif. (KSEE/KGPE) – Tri-tip is one of the many foods that are offered at the Clovis Rodeo, and one seller explains that the beloved meat is about community.

Scott Scharton is a part of the tri-tip committee at the Clovis Rodeo and he says for events like the rodeo they order about 7,500 to 8,000 lbs of tri-tip.

Scharton says the crew will come from 8 a.m. and be there until 9 p.m. He says they’ll cook until 9 a.m. to 5 p.m.

He says they order peeled tri-tip and it soaks overnight in the seasoning that they use.

“This tri-tip was started 40 years ago, by my grandpa actually. We started to serve just the community here working for the rodeo and then it turned into a small where we sold trip-tip to where its come today,” Scharton said.

Scharton says when he started at his first rodeo they sold about 1,500 pounds of meat.

He says the best part of being involved in the rodeo is that it is a family thing for them and that all of the money raised at the rodeo goes to the scholarship community.

“We buy everything local, from local people that support the Rodeo. Clovis Rodeo is basically family,” Scharton said.
