New mom Katie Lee Biegel has a protein-rich breakfast that will give you tons of energy

In looking for a recipe that matched her nutritional needs as a hardworking new mom as well as her wish for a breakfast that adds a little something nice but simple to the day, Katie Lee Biegel decided to show off a dish that puts a spin on avocado toast.

KATIE LEE BIEGEL: Hey, I'm Katie Lee Biegel, coming to you from my kitchen. I'm getting ready to reset my breakfast. We're all a little crazy these days. I just had a baby, so I am definitely crazy. I am making this avocado toast burger.

So I'm using Gardein's Ultimate Plant-Based Burger, cooking right here in my skillet. I just put a little bit of olive oil in there, and I took them right out of the package, frozen, into the skillet. They smell so good. You can see they have a nice brown on there.

All right, I'm going to cook some eggs to go along with it. So I've got a little skillet here going with a little olive oil, and I'm just going to break two eggs in there. I'm making two of them. Thought I'd make one for my husband.

Now my toast. I'm using whole wheat bread to get my fiber in, and I've got an avocado here. So I'm just going to put it right on my piece of toast and take my fork, give it a good mash. Oh yeah.

And those eggs are looking perfect. Oh yeah, right on to the top. And it's about to get better. I'll take it to the next level.

These are my husband's pickled onions-- put a few on top there. And I've got feta cheese here, I'm gonna put just a little crumble of that right on top. Oh, my goodness. Check that out. Can you see it? Doesn't it look good?

You can put a little Sriracha on there. Mm. Mm, mm, mm. This is delicious-- runny egg yolk, pickled onions, a little funky feta cheese on there. It's got something for everybody.
