Molly Yeh’s Incredible Big Fluffy Pancake Recipe Uses This Surprising Store-Bought Ingredient

So many pancake recipes promise a super-light and fluffy result that you can both see and taste. But Molly Yeh’s Big Fluffy Pancakes recipe actually delivers. These things are so fluffy that they tower over their competitors, and if you can believe it, Yeh uses a store-bought shortcut to get to the finish line.

The extreme fluffiness comes solely from the whipped egg whites Yeh starts with. “Beating all this air into them is going to help [the pancakes] achieve that cloudlike soufflé texture,” she said in a segment from her show Girl Meets Farm posted to Food Network’s Instagram account. You know you’ve beaten your whites to perfection when you can see the tracks of your mixer. Gradually add granulated sugar to the whites and beat until soft peaks form.

To the remaining yolks, add room-temperature milk, melted butter, and a dash of vanilla. “And now for my dry ingredients, one of my favorite shortcuts, I’m just going to use pancake mix,” Yeh said, adding the mix straight to the yolk mixture.

Gently fold in your egg whites to the yolk mixture being careful not to deflate all the air you’ve worked into them. “These are inspired by soufflé pancakes,” Yeh said. “They’re big and puffy and they get that height from the egg whites. So it’s really important that you do these two steps.”

And when your batter is finally all incorporated, you’re ready to cook your pancakes. Yeh likes to use ring molds to give her pancakes that tower-like effect. She lets them cook in the molds for about 10 minutes on low heat, and when the first side is done, she flips them right in their molds to let them cook for another seven minutes on the flip side.

Once both sides are golden brown, you’re ready to eat! “Look how geometrically pleasing they are!” Yeh said. She likes to serve her pancakes stacked on top of homemade sausage patties with a pat of butter and some syrup, but you can enjoy them however you’d like. Add berries and whipped cream or serve them with a side of scrambled eggs.

“Cutest pancakes ever!! My favorite!” one person commented on Yeh’s video. Another said, “Ouuu so fluffy!” And Yeh herself said, “They’re kind of like eating a cloud covered in butter and syrup.”
