Michael Symon’s “Dippy Eggs” Are Super Crispy but Have a Runny Yolk That’s Perfect for Dipping

If your breakfast item of choice is eggs all day every day, then it’s time to add a new way to prepare them to your repertoire. Chef Michael Symon just shared his favorite way to make eggs in the morning and his method results in crispy egg whites, runny yolks, and the perfect amount of flavor to pair perfectly with toast, bacon, avocado, or really anything else you like to eat your eggs with.

“This is my favorite way to make eggs,” Symon said in a video posted to Food Network’s Instagram account. I grew up with crispy eggs. They were what my grandfather made for me when I was a kid. We called them ‘dippy eggs.'”

You want to start this dish by heating up a pan until it’s nice and hot. While that pan is heating, you can crack your egg into a small ramekin or bowl, being careful not to puncture the yolk. “I was doing multiple eggs, I’d put multiple eggs in here,” Symon said.

Once the pan is hot, put a “copious” amount of olive oil into it. “Remember, these are fried eggs,” Symon said, so you need enough oil so that your eggs actually float and fry in the oil. And once that oil has begun to shimmer, you know it’s hot enough to start the frying process.

Pour your egg into the oil and let it begin to cook, adding salt and pepper as soon as the whites start to form. “These edges are going to start to get a nice golden brown, and then I’m going to baste the interior of the egg just a touch so those whites finish cooking,” Symon said. He uses a spoon to toss a bit of the hot oil onto the top of the egg to do just that.

Finally, it’s ready to serve. Symon likes his served on toast with a bit of chili flakes, extra salt, and a drizzle of olive oil.

“The only way to eat them!!” one person commented on Symon’s video. Another person said, “Hands down best eggs ever!! Over white rice with avocado.”

Someone else added, “That’s my favorite way as well. There’s nothing like crispy whites and a running yolk. Yum!”

Give Michael Symon’s dippy eggs a spin and you may find it hard to go back to your old egg cooking method. You just can’t beat crispy whites and runny yolk — it’s the perfect pairing for pretty much anything.
