Meghan Markle did indeed switch into a final third outfit before ending her day of engagements in Fiji and Tonga. She met King Tupou VI and Queen Nanasipauʻu and attended an official dinner and reception they hosted for her and Harry in the evening. That called for formal attire:

So Meghan wore her second evening look of the week: a white column gown by Theia with Aquazzura heels, a Givenchy clutch, Birks earrings, and the most sentimental touch of all: Princess Diana's aquamarine ring.

The ring, believed to be a gift from Prince Harry, is by Asprey and was created in 1997. It an emerald-cut aquamarine that's surrounded by small solitaire diamonds and set 24 carat yellow-gold. Very fancy:
