Mary McCartney Serves It Up, on Discovery+. The photographer, author and vegetarian ambassador whips up comforting classics in the company of famous pals like Kate Hudson and Dave Grohl. The daughter of renowned photographer and activist Linda McCartney and music icon Paul McCartney, Mary reminisces about childhood memories in the kitchen as she shows us how to make her sweet chile corn fritters in the video above. MARY MCCARTNEY: Hi, I'm Mary McCartney. And I'm going to be cooking my Chili Sweet Corn Fritters which encapsulate the taste of summer. You can make them any time of year because I'm going to be using frozen sweet corn.

So first thing is to get the sweet corn into the bowl, 2 cups. Growing up with the family, we'd go to Long Island where my grandfather lived to visit him. And we'd get fresh corn from the farmer's market. So this really is inspired by those flavors of summer for me. And then I'm going to add 1 medium, finely-chopped garlic, which I prepared before, and then 1 chili or no chili, depending on how hot you like it. Chuck that in there.

And now, 1 medium red onion. These are B12 nutritional yeast flakes. And they're really good for you. They have B12. And they add like a nutty, cheesy flavor. So 1 tablespoon of that. Give them a little mix. And you can see that that's color and freshness. 1 cup of all-purpose flour. And now, to give it a little bit of lift and a little bit of rise, I'm going to add 1 teaspoon of baking powder and a plant-based milk, unsweetened.

1/2 a cup, just to bind it all together. I'm going to use a nice grind of black pepper, sea-salt flakes, a squeeze of lemon. One squeeze, I think, is about 1 tablespoon. And 3 tablespoons of finely-chopped parsley. You don't have to be really exact with my recipe. So I'm going to use a handful. Here we go. That's the parsley. And give it one last really good stir.

I've kind of grown up in the kitchen cooking. My mom was an amazing cook. And I started off helping her chop things. And then I start coming up with my own recipes. This kind of thing is top on the list. I've got a large frying pan. I don't usually fry in too much oil. Like a tablespoon will work well. On a medium-high heat because we want it nice and hot.

And now I'm going to show you something. Going to take a little bit of the batter and drop it into the pan. And listen for a sizzle. That's sizzling. So that means I'm ready to get on with the fritters. Putting in 1 tablespoon at a time. And then I'm going to pat them down, so that they're even and flat, so that they cook evenly.

Fry for about 2 minutes on each side, just until they're nice and golden brown. On the new cooking show, "Mary McCartney Serves It Up", it's all about coming up with quick, easy recipes. And then, at the end, I invite an interesting friend to come and eat with me. Probably one of my favorite things is Dave Grohl-- I showed him how to make my Vegan Banoffee Cheesecake. So that was great fun.

Ooh, look at that one. So good. It's got the little red chili flecks in it too. So I think these taste delicious, served with a sweet chili dipping sauce. So good, they smell so good.
