Martha Stewart Put a New Spin on Pineapple Upside Down Cake & Calls the Recipe 'Foolproof'

Pineapple Upside Down Cake is a classic springtime treat. The combination of juicy pineapples and cherries with soft cake is to-die-for! Martha Stewart recently put a new twist on this delicious dessert, as she does, and called the recipe “foolproof,” even for beginners.

“This citrus upside-down cake looks formidable, but it’s practically foolproof!” Stewart captioned the post on Instagram. But instead of the pineapples and cherries, Stewart uses tangerines or oranges in her Citrus Upside Down Cake, and wow, it looks good!

In her caption, the Martha Cooks star explained this simple recipe that looks so good. “You slice peeled oranges into rounds, nestle them in a butter-rum glaze in a square pan, spread the batter over them, bake, and flip.” It’s as simple as that!

“To achieve the effect of the stained-glass windows at Chartres, we combined blood oranges, Cara Caras, and mandarins,” she added.

In the full recipe, which originally appeared in Martha Stewart Living in April 2021, Stewart gives more detailed instructions and an ingredients list, which includes vanilla extract and sour cream for the cake and dark rum for the topping.

Stewart makes this cake by whisking together several dry ingredients in one bowl and using an electric mixer to beat wet ingredients in another bowl. For the topping, she recommends using a sharp knife to cut the ends off each citrus, then cutting away the peel and working to get out “as much white pith as possible.” From there, you’ll slice the fruit crosswise into ¼-inch-thick rounds, remove the seeds, and arrange the citrus slices in the rum mixture on the bottom of the pan.

The batter goes next, and once it’s done, you’ll flip it upside down (hence, the name) before serving.

The finished result looks absolutely divine! The different colored oranges look beautiful, and you just know every bite is bursting with flavor. Serve with vanilla ice cream, whipped cream, and/or other fruits. It’s the perfect springtime dessert!
