These Margarita Cupcakes Will Make You Wish All Frosting Was Boozy

Dessert is always the afterthought of Cinco de Mayo. Tacos and guac are of utmost importance, I get it. As are the margaritas. But after all the salty snacks (and drinks), sweets are definitely in order. These boozy cupcakes keep the fiesta going.

The fun is in the frosting. Add a healthy pour of tequila to the bowl with butter, powdered sugar, and lime juice and beat until fluffy. The booze pretty much takes the place of the cream or milk. Plus it adds a sweet little buzz.

Now I know tequila can be rough, and one bad night can you make you wary of the alcohol forever. But I promise this frosting will not trigger terrible regret or nightmare-ish hangovers. It, along with fresh lime, adds a bright and bold kick that balances the sweetness and creaminess of buttercream. If little ones will be partying too, make some virgin margarita frosting too! (Just set aside some of the frosting before adding the tequila.)

The cupcakes themselves are kid-friendly. Just a little bit of lime juice and zest get added to a boxed vanilla cake batter. It's a an extra touch that won't got unnoticed. People will be begging you for the recipe. It's up to you if you want to let them in on your shortcut secret.
