Magical rainbow flatbread is a Pride dish you can eat year-round

While this year’s Pride was certainly unlike others thanks to social distancing measures, that doesn’t mean you can’t enjoy some of the celebratory fares at home. If you’re sorely missing the sentimental rainbows that adorn bars and restaurants every year, you’re definitely not alone, but Pride isn’t only limited to the parades!

The recent ubiquity of the LGBTQIA+ symbol is a reminder of how far the nation has come and a signal from local establishments that its LGBTQIA+ patrons are safe and accepted. While this rainbow flatbread pizza is no substitute for a parade or party, it might be just the tasty pick-me-up you need.

So grab your favorite selection of colorful veggies and get to cooking. For our chopped vegetables, In The Know is using orange and yellow bell peppers, tomatoes, red onions, purple potatoes and broccoli.

Ingredients

  • Pizza crust

  • 1/2 cup pizza sauce

  • 1 cup shredded mozzarella

  • A rainbow of your favorite veggies

  • 2 tsp. olive oil

  • 2 tsp. Italian seasoning

First, place your pizza crust on a baking sheet and cover with pizza sauce and mozzarella.

Place the purple potatoes in two rows running through the center of the crust. Next, add the onions in two rows on either side of the potatoes. Then add a row of broccoli next to each row of onions.

Continue to add the vegetables in two rows on both sides of the pizza until all the veggies are placed. Now, you’ll want to coat the toppings in olive oil, sprinkle with Italian seasoning and pop in the oven for 20 minutes.

Finally, enjoy this vibrant, nutrient-packed pizza!
