Made In Oklahoma: Bacon wrapped pork roast

OKLAHOMA CITY (KFOR) – Wrapping your pork roast in bacon adds extra flavor and keeps it from getting dry!

Ingredients

MIO Bacon wrapped pork roast.
MIO Bacon wrapped pork roast.
  • 1 (4-5 lbs.) pork loin roast, preferably center cut

  • 3 cloves of garlic cut in half

  • Daddy Hinkles Original Instant Meat Marinade, both dry and liquid

  • 4 slices of Bar-S Bacon

Steps

  1. Preheat your oven 325 degrees

  2. You can trim visible fat from your pork roast if you’d like. Using a paring knife, cut 6 slits in your roast and stuff each with a piece of garlic.

  3. Drizzle the Daddy Hinkles liquid marinade generously over your roast. Sprinkle the dry seasoning and rub in.

  4. Cut your bacon in half and lay across your pork roast, spacing them evenly.

  5. Roast (about 20 minutes per pound) until the meat thermometer says 160 degrees in the center. Take your roast out of the oven, tent with tin foil and let rest for 10 minutes before cutting.
