Made in Oklahoma: Antipasto skewers

OKLAHOMA CITY (KFOR) – These skewers are colorful, flavorful and fun to make!

Ingredients

  • 1/2 package of fully cooked frozen Italian-style meatballs

  • 1/2 lb. of Mountain View Meat Company hot links

  • 3 tablespoons of extra virgin olive oil

  • 1 tablespoon of Garden Club apple cider vinegar

  • 1/2 teaspoon Daddy Hinkles Original Seasoning

  • 1/4 teaspoon crushed red pepper

  • 1 1/2 teaspoon chopped fresh oregano

  • 14 ounce can of small artichoke hearts, drained and sliced lengthwise

  • 8 ounce fresh mozzarella balls, small or pearl size

  • 1/2 pint of cherry or grape tomatoes

  • 9 ounce package of refrigerated cheese tortellini, cooked by package instruction

  • 1/2 cup of Scissortail Farms basic, torn into big pieces

Steps

  1. Heat meatballs according to package instructions.

  2. Cut hotlinks into inch pieces and set aside.

  3. In a large bowl, whisk together the olive oil, apple cider vinegar, Daddy Hinkles seasoning, red pepper and oregano.

  4. Add in the artichoke hearts, mozzarella balls, tomatoes, tortellini and meatballs. Gently fold them all together and let marinate for at least 2 hours.

  5. On bamboo skewers, thread your prepared ingredients and add pieces of basil to each skewer.

  6. Serve at room temperature.

This recipe makes around 15 regular-sized skewers, but can be doubled by cutting skewers in half.
