Everyone knows we love a good egg roll. In fact, we're running out of things to stuff them with! (Hot insider goss: I just fried egg roll rappers for nacho chips and they were AMAZING. Coming soon to a computer near you.)
Believe it or not, we had never stuffed egg rolls with mac & cheese until now. Shocking, I know. Now that we've done it though, there's no going back. Obviously, they're amazing.
You might wonder why Mac and cheese needs a fried outer layer. Answer: the crunch, people, the crunch! Imagine the best baked Mac ever except the bread crumb topping surrounds the ENTIRE thing. Yeah.
They couldn't be easier to make, especially if you use a boxed Mac like we did! If you want them extra cheesy, add some freshly grated cheddar or mozz for good measure. All that's left is rolling them up in egg roll rappers (I mean, you should be a pro by now) and getting them golden in a shallow fry. Your taste buds will thank you, your arteries will not.
