If You Love Poutine, You Must Try These Loaded Breakfast Fries

When it comes to poutine, the states are severely missing out. Why it's so hard to find fries with cheese curds and gravy, not in Canada, is beyond me. The simple solution would be to make your own, but cheese curds can be tricky to find. Thankfully, wannabe poutine with melty cheese is pretty freakin' amazing, if not authentic.

For Delish's first go at poutine, I didn't want to go classic. Mostly because we were already missing arguably the most key ingredient, but also because we were afraid to try messing with the gravy. So we did what Delish does best and made it crazy and awesome. Enter: these cheddar fries with sausage gravy and fried eggs. They're over-the-top in the best possible way.

To make them, start with baked fries then layer them up in a skillet with cheddar. If you can find cheese curds, more power to you! While the cheese gets melty in the oven, make the gravy and fry those eggs. The gravy is simple: sauté some breakfast sausage, make a quick roux with butter and flour then simmer it all in milk until thickened. You'll want to eat it straight from the pan. So just imagine how incredible it tastes on cheesy fries ... with a runny yolk.
